Nutrition will greatly depend on types of tortillas and salsa used. I make my homemade tortillas and they seem to be a little healthier than many of the store bought mixes and ready made ones. Ingredients

    1.5 lb beef, browned
    1 bell pepper
    1/2 onion
    1 can or a few green chili peppers
    1 cup shredded cheddar cheese
    torillas
    2 cups salsa
    sour cream

Directions

Brown beef, drain. Brown veggies in same pan. Add 1/2 of salsa and 1/2 of cheese. Add small amount of salsa to bottom of 9 x 12 pan to prevent sticking. Roll meat mixture into tortillas and place in pan. Add remaining salsa over top, sprinkle with remaining cheese. Bake 350 for 20 min. Top with sour cream when serving.
