Ingredients

    2 15-oz cans black beans, rinsed and drained
    3/4 cup onions (red) minced
    5 cloves garlic, minced
    1 bell pepper (red, orange, or yellow), minced
    1 package (227 grarms) mushrooms, diced
    1/2 cup spinach, minced
    3 T cilantro, minced
    1 oz lemon juice
    1/3 cup frozen corn
    1 tsp salt
    1 T red pepper flakes
    1 T coriander seed
    1 T cumin seed
    1 large egg
    1/4 cup flour

Directions

Use your hands to mash the black beans as much as you'd like.

Sautee the onions in the oil, add the garlic and bell peppers. Cook until softened. Add to the black beans.

Using the same pan, add the mushrooms and cook for 10 minutes. Add the spinach and cook a few more minutes. Add to the black beans.

Using the same pan, toast the spices. Pull them off and cool them, then grind them. Add to the black beans.

Add the egg, flour, tomato paste, and corn to the black beans. Mix thoroughly.

Divide into 6 (or 8) burgers. Cook over medium heat for a few minutes on each side (non-stick spray is your friend here, on the pan and spatula).

Put the burgers on a sheet pan and pop in a 400 degree (F) oven for 10 minutes.

SERVING SUGGESTIONS:
Plain, with a side salad
On a bun (hence the 'burger') with salsa
Over pasta

OPTIONS:
You can change out any of the veggies, add whatever you like.
You can easily change the spices you add to customize a new flavor experience.
Use different beans for different flavors (eg chickpeas to make a hummus burger)
Roll them into little 'meatballs' and cook in a similar fashion- a great alternative to real meatballs.
