Introduction

I usually like to make this with black beans, and sometimes without garbanzo beans, but I based this on what I had on hand this time. I also like to use "Fiesta Tomatoes" I find at ALDI, but substituted tomatoes with chiles, which have a bit more kick. Ingredients

    6 cups prepared tri-color rotini
    1 can garbanzo beans, drained and rinsed
    1.5 cup frozen sweet corn
    .5 cup chopped green pepper (I use frozen)
    1 can tomatoes with chilies, undrained
    1 packet taco seasoning

Directions

Cook pasta, thaw/ drain veggies as necessary. Place tomatoes (undrained) in a small saucepan and add taco seasoning. Cook until somewhat thickened. Mix all ingredients. Chill- serve cold. Makes 10 servings, one cup each.
