Ingredients

    BAKED OATMEAL MUFFINS - lots of GOOD carbohydrates, good for on-the-go breakfasts, or leisurely breakfasts

    preheat to 350. Prepare a 12-muffin tin with spray PAM, and sprinkle with corn meal.

    Ingredients:
    2 cups plus some of raw, rolled oats
    1 cup fat free milk
    1/2 cup sugar free apple sauce (I used sf apricot preserves, and sf apple butter this morning)
    1 cup cooked barley/kasha grain
    1/2 -3/4 tsp baking powder
    1/2 cup splenda sweetner (adjust to taste)
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp vanilla extract
    2 tsp canola oil
    2 eggs or egg equivalent
    1/4 cup chopped walnuts (Optional, POINTS)
    1/8 cup fresh blueberries
    1/8 cup fresh cranberries

    Mix all in a bowl. Mix in the cooked barley/kasha grain. THis gives these muffins lots of body and crunch. Keep some rolled oats available to mix in at the last minute, to give some texture.

    Bake until toothpick comes out clean. Enjoy!
