    170 grams sweet short pastry
    3 eggs
    1 cup water
    2 medium lemons (rind and juice)
    1 cup sugar
    1 tbsp butter
    4 Tbsp cornflour
    1/2 tsp vanilla essence


Bake pastry in pie dish at 200 deg C for 20 minutes.

Filling: In top of double boiler place yolks of 3 eggs, water, lemon juice and rind, sugar, butter and cornflour. Stir all over boiling water until very thick and cook for 2-3 minutes extra. when quite cold, turn into the cooled baked tart shell and top with meringue.

Meringue: Beat egg-whites until stiff then add the castor sugar a little at a time beating well after each addition. Finall, beat in the vanilla. Spread meringue well over to the edges to seal. Cook at 200C for 10-15 minutes or until golden brown.
