Ingredients

    1/2 pound Campari tomatoes, halved and quartered
    1 large cucumber, peeled and chopped
    2/3 cup fresh lemon juice
    1/2tbsp olive oil
    1 large clove garlic, crushed or finely minced
    generous pinch kosher salt (maybe 1/8tsp total)
    1/4 tsp fresh ground black pepper

Directions

Makes 2 generous servings

Place chopped tomato and cucumber in bowl

Whisk together lemon juice, olive oil, garlic, salt and pepper, then pour over veggies. Serve on a bed of lettuce or by itself.
