Ingredients

    Olive oil
    Onion, medium, chopped
    Garlic clove, minced
    Red Peppers, 2 large, chopped
    Tomato Sauce, 2 x 14 oz cans
    Mushrooms, 10 oz can
    Water, 1/2 cup
    Oregano, 1 tsp
    Cottage Cheese, 1 cup
    Parmesan Cheese, 1/3 cup, grated
    Spinach, frozen then thawed and well drained, 10 oz
    Egg, 1 large
    Olive oil, 2 tsp
    Salt, 1 tsp
    Mozarella Cheese, 6 oz, sliced
    Lasagne Noodles, not cooked, 3/4 box

Directions

Saute onion, peppers and garlic in oil. Add tomato sauce, undrained mushrooms, water and oregano (Italian Seasoning). Boil then remove from heat. Combine cottage cheese, spinach, egg, oil and salt.
Layer in a 9x13 pan: 1/3 sauce, cover with lasagne noodles, 1/3 sauce again, spinach mixture, lasagne noodles. Cover with foil (sealed well) and bake at 375 degrees F. for 1 hour. Uncover and place mozarella slices on top and bake until golden and cheese melts, for approximately 15 minutes. Serves 8 happy people!
