Ingredients

    300g flat green beans, stalk end removed
    2 medium zucchini, julienned
    1/2 cup pitted black olives
    100g thinly sliced sun-dried tomatoes

    1/4 cup olive oil
    2 Tbl lemon juice or white wine vinegar
    Small handfull mint, roughly chopped
    1 tsp Dijon mustard
    1 clove garlice, crushed
    Sea salt & freshly ground pepper

Directions

Cook the beans in boiling salted water until just cooked. Drain and refresh under cold water. Pat dry with kitchen towels and cut in half. Put the prepared beans, zuchinni, olives and tomatoes in a bowl. Whisk all the remaining ingredients together and toss through the vegetables.
