Introduction

I made this salad this morning for taking to work and liked it. It's probably possible to leave out the Omega oil but I added it to gain the benefits. Number of Servings: 4

Ingredients

    3-4 stalks celery (washed and sliced)
    5-6 cherry tomatos (washed and quartered)
    1 red pepper (washed and de-seeded_
    1 small shallot onion (finely diced)
    1 tin of borlotti beans in water (drained)
    1tbsp apple cider vinegar
    1 tbsp Omega 3/6/9 oil
    2 tbsp lemon juice
    pinch of splenda
    1/2 tsp salad herbs
    salt & pepper to taste

Directions

Makes 4 small or 2 larger servings (lunch size portion is 2 servings)

Mix all the ingredients in a large bowl
Let it infuse / rest in the fridge for at least 30 min.
