Introduction

This is a lower sodium, higher fiber , vegetarian version of a traditional favorite food. I find that one is enough for lunch if I have some fruit or gelatin with it. Ingredients

    1 whole wheat tortilla,
    1 cherry tomato or equivalent amount,
    salsa to taste (appx 1 tsp),
    1 TBL chopped or pureed avocado,
    1/4 cup brown rice,
    1/4 cup refried beans.
    .5 oz cheese
    (I check my purchases to look for lowest sodium.)

Directions

Cook brown rice according to package instructions. (I make enough for several tortillas at one time.)
Remove skin from avocado and chop or puree (add a little lemon juice if you want it to keep or use immediately).
Chop tomato.
Layer all ingredients onto tortilla shell and roll it up.
Makes one which is enough for a lunch entree.
