Introduction

Absoloutely beats the old Tuna melts! In a 'pinch' I've used regular tuna (well drained) & added liquid smoke to it to get the same taste & results! Absoloutely beats the old Tuna melts! In a 'pinch' I've used regular tuna (well drained) & added liquid smoke to it to get the same taste & results!

Ingredients

    1 5oz.. pouch of Hickory 'smoked ' Stakist Tuna
    1 can, star kist Light tuna in water,drained!
    1 c. shredded Colby Jack cheese blend
    2 T. shallots
    1-1/2 ox. of non-fat or low-fat Cream Cheese, softened
    1/8 c. roasted red peepper strips, chopped
    4 8" Mission Low Carb Tortillas

Directions

Mix tuna, cream cheese, shredded cheese, peppers & shallots untill well blended.
Spread mixture on 'half' tortillas shells just to the edges. Fold into, similar to an omelette, brush with olive oil, place on a cookie sheet in 350* oven for 15 min. When middles are 'gooey', place on top rach to toast till golden brown. Serve immediately.
