This is a recipe from Epicurious. I have made it with Homemade pizza dough, which you can find in my shared Recipe Box. Ingredients

1 recipe Pizza Dough (in my Recipe Box)
1 garlic clove, minced
1 1/4 lb eggplant, cut into 3/4 inch rounds
1 1/4 cups sliced provolone cheese
1/3 cup sliced green olives (although Kalamata are nice too)
1/4 cup chopped parsley
Directions
Mix garlic and oil together in a small bowl.
Brush both sides of eggplant with oil.
Grill on each side for 3 - 5 minutes. Then, cut into 1 inch cubes
Prepare dough onto baking sheet and bake in oven at 400F for approximately 10 minutes.
Remove and brush with garlic oil. Add all toppings ending with cheese.
Bake for an additional 10 - 15 minutes until the cheese is melted.
