Introduction
Palak Saag (Indian Spinach Curry), I made this to freeze. It's easy to add to- chickpeas for channa saag, potatoes for saag aloo, chicken, paneer... you get the idea. Ingredients

2 (16 oz ea) bags frozen spinach, thawed
1.5 tbsp oil
2 onions
1 green chili, washed & cut open
2 tbsp each minced garlic and ginger
4 tomatoes, chopped
2 tbsp garam masala
2 tsp curry powder
1 tsp coriander powder
1/2 tsp turmeric
salt to taste
3/4 cup milk
2 tbsp butter
Directions
Heat spinach until thawed, or thaw ahead of time in fridge. Heat oil in large pan, add onion, chili, ginger and garlic. Cook until onion begins to brown. Add tomatoes, garam masala, curry powder, turmeric, and coriander powder, and about 1/2 cup or so of water to cook the tomatoes, about 10 minutes. Then add spinach and 3 cups of water, one at a time, each about 6-7 minutes apart, as spinach cooks. Then add milk , mix well and cook for 6-7 minutes more. Let cool, then blend in batches or process with immersion blender. Add butter, let it melt and mix it in. Makes about 9 cups total, about 13 servings 2/3-cup each.
