Ingredients

3/4 c All purpose flour
1/4 c Whole wheat flour
1 c Natural wheat bran
1 tsp Baking powder
1 tsp Baking soda
1/4 tsp salt
2 tbsp Cocoa
1 tsp cinnamon
1/4 c light margarine
1/2 c sugar or sugar substitute
2 eggs
1/4 c Sour Milk - add 1tsp vinegar to skim or 1% milk
4 Medium mashed bananas
1/2c raisins
Directions
Measure all dry ingredients (except the sugar) in a large bowl. Stir to combine and then make a well in the center.
In a new bowl, cream butter, sugar and eggs until well blended. Add sour milk and broken up bananas and blend until bananas are smooth, but still a bit lumpy. Pour banana mixture into dry ingredients and mix until moistened.
Fill greased or lined muffin tins 3/4 full and bake at 400F (200C) for 20 minutes.
Makes 15-17 medium muffins.
