Introduction

Ingredients

    1 can black beans, rinsed and drained
    1 can corn niblets, rinsed and drained
    3 plum tomatoes, chopped
    1/4 cup chopped onion
    1/4 cup apple cider vinegar
    2 tbsp olive oil (or less)
    salt, pepper, and ground cumin to taste

Directions

Stir all ingredients together. Serve chilled or at room temperature. Makes 6 generous servings.
