Ingredients

    6-7 cups brown rice
    2 cans black beans, rinsed
    2 celery hearts, finely chopped
    1/2 cup olive oil
    1/2 cup cold water
    4 TBLS cilantro, dried or fresh
    4 TBLS frozen orange juice concentrate
    3 TBLS cumin seed, ground
    3 TBLS chili powder

Directions

Cook brown rice in a rice cooker or on the stove until tender while preparing other ingredients. Open and rinse both cans of black beans. Set aside in a large bowl. Rinse both celery hearts, and finely chop into bite sized pieces. Mix in with the black beans.
In a smaller bowl, mix olive oil, water, cilantro, frozen orange juice, cumin, and chili powder. Whisk together for 2 minutes, cover, and refrigerate for 10 minutes.
While waiting for the dressing to chill, add finished rice into black bean and celery mix, toss well, and then add dressing. Mix well.
Cover and chill approx. 2 hours and keep refrigerated until served. Makes 18 servings. (1/2 cup serving size)
