Ingredients

1 Box Barilla whole grain penne pasta, 13.25 oz
1/3 c reduced fat mayo
1/3 c low-fat or greek yogurt
2 T olive oil
1 T red wine vinegar or lemon
1 clove garlic, minced
1/8 tsp salt
freshly ground pepper to taste or Mrs. Dash
1 c cherry or grape tomatoes, halved
1 c diced red or yellow bell peppers
1 c grated carrots (2-4 carrots)
1/2 c chopped scallions
1/2 c chopped pitted olives(black or kalamata
1/3 c slivered fresh basil
Directions
Cook pasta in pot of boiling salted water, around 10 min. Drain and refresh under cold running water.
Whisk mayonnaise, yogurt, oil, vinegar, garlic, salt and pepper in a large bowl until smooth. Add the cooked pasta and stir to coat.
Add chopped vegetables and stir.
