Introduction

An easy breakfast cassrole that I make on Sundays, put into containers, & take to work with me for breakfast each day. An easy breakfast cassrole that I make on Sundays, put into containers, & take to work with me for breakfast each day.
Number of Servings: 8

Ingredients

    12 eggs
    1lb turkey sausage
    1/2 cup mushrooms
    1/2 cup onion, chopped
    1/2 cup broccoli, chopped into small florettes
    1 2.8 oz package of real bacon pieces
    3/4 cup Low fat Cheddar Cheese
    1 tbsp sage
    1 tbsp olive oil
    salt & pepper to taste

Directions

In a non-stick frying pan, brown the sausage with sage. Add in onion, mushrooms, bacon pieces, & broccoil. Saute about 5 minutes. Coat 9x13in baking glass dish with olive oil. Scramble eggs inside baking dish. Pour meat & veggie mixture into glass dish. Stir in cheese. Add salt & pepper to taste. Slowly stir well.

Bake at 375 degrees for 20 minutes. Check middle with a fork to make sure it's cooked through.

Make 8 servings.
