Ingredients

4 small to medium summer squash, large dice
3 large red potatoes or 2 baking potatoes, large dice
1 Tablespoon butter
2 cloves garlic, minced
Fresh herbs of choice (I used basil)
1 teaspoon salt
1 teaspoon pepper
1/4 cup half and half cream (can use low-fat)
1/3 cup low-fat mozarella cheese, shredded
1/3 cup Parmesan cheese (or other strong cheese), shredded
Directions
Preheat oven to 350 degrees.
Steam squash and potatoes until very soft. Mash with a potato masher in a large bowl.
Transfer to a large pot and turn heat to medium low. Add cream, butter, garlic, herbs, salt, and pepper.
Mix well. Spread into a smallish dish (I used a 9x9" pan). Sprinkle with mozarella cheese and top with parmesan (or any other hard, strong cheese... gruyere could work well).
Bake about 40 minutes or until brown and bubbly.
