Introduction

A delicious vegan stroganoff with mushrooms, seitan, and onions. A delicious vegan stroganoff with mushrooms, seitan, and onions.

Ingredients

    1 Box (8 oz.) Seitan
    One Small Onion, Chopped
    10 oz. Mushrooms, Sliced
    2/3 Carton (18 tbsp.) Tofutti Better Than Sour Cream
    3 Cloves Garlic
    1 Box (16 oz.) Whole Wheat Rotini
    1 tbsp. Olive Oil


Directions

Cook pasta according to directions.

Saute garlic in olive oil until aromatic. Add onion and seitan and saute until golden. Add mushrooms and & cook over medium heat. Stir in sour cream, continue cooking over medium heat. Remove from heat and allow sauce to thicken. If necessary, add cornstarch.

Serve over hot noodles.

1 cup noodles + 1/8 sauce = 1 serving. Makes 8 servings.
