Vegetarian Salad that works nicely as a side dish or main entree. Vegetarian Salad that works nicely as a side dish or main entree.
Number of Servings: 8


    15 oz can Black Beans, rinsed and drained
    15 oz can Garbanzo Beans, drained
    7.5 oz (1/2 can) kernel corn, drained
    1/2 cup onion, finely diced
    1 Tbsp. chopped fresh cilantro
    1 cup red bell pepper, diced
    2 jalapeno peppers, seeded and finely chopped
    1/4 T. lime juice
    1 tsp. ground black pepper
    salt to taste


Combine all ingredients in a large bowl and mix well. Refrigerate for 2 hours to allow flavors to blend. Serve with crumbled tortilla chips mixed in for texture.

Makes 8 one cup servings, with 1/4 ounce of tortilla chips crumbled in each serving.
