Ingredients

    2 medium fresh red tomatoes
    2 medium fresh yellow tomatoes
    2 ounces fat-free feta cheese crumbles
    1 teaspoon extra virgin olive oil
    1 teaspoon balsamic vinegar
    1 clove fresh garlic
    1 teaspoon fresh or dried rosemary leaves
    1/8 teaspoon coarse sea salt
    1/8 teaspoon black peppercorns (or ground pepper)

Directions

Wash red and yellow tomatoes, remove cores, and cut into wedges (1/2 inch wide on the wide side) and set aside. In a bowl large enough to accomdate tossing the tomatoes, whisk together olive oil and balsamic vinegar. Using a mortar and pestle, grind together the garlic, rosemary, sea salt and peppercorns until salt and peppercorns are fairly well crushed. Add crushed seasonings to the vinegar and oil and whisk well.

Add tomato wedges and crumbled feta chees and toss until tomatoes are well-coated and cheese is evenly distributed. Chill until serving time.

Makes 4 1-cup servings.
