Introduction

Easiest shrimp dish ever! Easiest shrimp dish ever!
Number of Servings: 4

Ingredients

    3/4 cup of dry Orzo Pasta
    10-12 medium shrimp
    1 1/2 cups of cherry/grape/pear tomatoes (sliced)
    1/2 cup of diced scallions
    1/2 cup cubed cucumbers
    1/4 cup of rough chopped flat leaf parsley
    3-4 tbsp of rough chopped fresh mint leaves
    1/2 cup fresh squeezed lemon juice

Directions

This makes about 4 servings (1 - 1 1/2 cups per serving). Keep in mind the Orzo pasta will double in size as it cooks.

Boil water in 8 qt. pan. Once at a boil add in Orzo pasta. Cook 10-12 minutes, or until al dente. Drain water and then add in shrimp, lemon juice and parsley. Cook on low heat until shrimp have changed their color to pink. Add in all other ingredients and cover for 1-2 minutes to slightly steam. Season to taste...

    I made it last night, and just barely tasted it, because it was alredy late to eat, but it tasted very good! I especially liked that it was so sour and had a distinct lemon flavor. Mint leaves also add an unusual twist to this recipe. I'm looking forward to lunch time when I will get to eat it!!! - 7/31/07
