Introduction

Vegetarian version of a chinese favorite Vegetarian version of a chinese favorite
Number of Servings: 4

Ingredients

    Sauce
    3 tbs Soy Sauce
    2 Tbs Mirin or Sherry
    2 Tsp Cornstarch

    Noodles
    8oz box enriched Lo Mein noodles or thin spaghetti
    2 Tbs Olive Oil
    1 Cup sliced mushrooms
    1/2 cup Scallions
    3 cloves of garlic
    1 Cup thinly sliced Carrots
    1 Cup thinly sliced Celery
    2 Cup Shredded bok Choy cut up some of the stem thinly too
    (I like to throw some corn in there when its in season as well) Also things like water chesnutts or even some tofu work well.

Directions

4 Servings
In a seperate bowl mix the sauce

Cook Noodles as per box instruction

Heat your oil on med hi then toss all your veggies in the wok/fryingpan for 4-6 minutes mix in the cooked pasta then the sauce stir everything up and enjoy.

    Very Good
    I'm making this for the second time. It's a great recipe! I used merlot because I didn't have sherry on hand, and I am going to double the sauce this time because it was a little on the dry side the first time I made it. - 1/11/11
