Introduction

This is a healthy variation of Grandpa's stuffing that we used to have every Thanksgiving. If you cook the stuffing inside of a bird (or in a pan under chicken pieces), omit the chicken broth. Ingredients

    12 slices of wheat bread, toasted
    14 oz. turkey breakfast sausage links
    3 large stalks of celery with tops, chopped
    1/2 large onion, chopped fine
    1/4 cup fresh sage, chopped
    1 1/2 tsp kosher salt
    1/2 tsp freshly cracked pepper
    1/2 cup chicken broth

Directions

Cook the sausage links until browned on all sides. Remove from pan and slice into 1/2-inch slices. Cut the toast into 1/4" cubes. Toss sausage, toast, celery, onion, sage, salt, and pepper together in a large mixing bowl.

If you are stuffing a bird, use the stuffing mixture at this stage. Pack it tightly into the body cavity (and the neck cavity if possible) and secure the skin flaps. Add approximately 30 minutes to the cooking time of the bird. Put the bird in the oven immediately after stuffing.

If you are not stuffing a bird (or if you have leftovers after stuffing the bird), transfer the stuffing mixture into a 3-quart casserole. Pour the chicken broth evenly over the stuffing. Bake in a 350-degree oven for 60 minutes.
