Introduction

Ingredients

Tilapia filet, 8 oz (about 2 fillets)
Green Beans (snap), 8 beans (4" long)
Onion, Spring or Green (top & bulbs included), chopped, raw, 1 tbsp
Celery, raw, 1 stalk, small (5" long)
Baby Carrots, raw, 4 large
Olive Oil, 2 1tsp
Old Bay, 1 tsp
Parchment Paper (24"x24"), 2 serving (NOTE! NOT WAX PAPER!)
Lemon Slice, 1 serving
Directions
Preheat oven to 350F.
French the String Beans (cut them lengthwise)
Cut the celery into sticks approximately the same size as the string beans.
Cut the Carrots into sticks of about the same size.
Heat up one tsp of the olive oil in a fry pan.
Saute' the String Beans, carrots and celery until tender.
Add the green onions and remove from heat to cool for handling.
Lay out the parchment paper and brush with remaining olive oil.
Place vegetables in the middle of one sheet of paper. Season the fillets with the Old Bay (use more or less per your tastes)
Place on the vegetables.
Place a thin slice on lemon on top.
Place the other sheet of parchment, oiled side down, on top.
Starting on side, fold the paper up about 1/2 inch and crease. Fold again and continue until up against the fish. I use an office stapler at this point and put a couple staples in to hold it in place.
Continue folding the other sides to close the bag up around the fish, removing as much air as you can.
You can trim off the corners to make it look neater, but make sure that the bag remains sealed.
Place this on a baking sheet and into the oven.
Bake until the parchment starts to turn brown, about 20 minutes.
Remove and place on a presentation dish.
At the dinner table, tear open the top of the bag for a dramatic presentation.
