Introduction

My father in law wanted a healthier version of this bread he likes from a local market. With no recipe available this is what I came up with! (Version 1) If you try this recipe please leave a comment how you like it and what you would change to make it more healthy! Next version will be a little lower carb as FIL is on a low carb diet. Ingredients

    1 1/2 Tablespoon Sugar
    1 Teaspoon Salt
    2 1/4 Teaspoon Dry Yeast
    4 Teaspoons Vital Wheat Gluten
    1 Cup Warm Water
    1 1/2 Tablespoon Olive Oil
    3/4 Cup Shredded Zucchini
    1 Large jalapeņo, Diced, Seedless
    1 3/4 Cup Bread Flour
    1 1/2 Cup Whole Wheat Flour

Directions

Mix 3/4 cups bread flour, salt, sugar, Vital wheat gluten and dry yeast with 1 cup warm water. Add oil zucchini, and jalapeno Mix. Add remaining flours. Kneed into smooth ball. Place into a oiled bowl, turning to coat, to rise for 60 minutes. Punch down and shape. Allow the dough to rise for an additional 60 minutes and then bake at 375 until browned.
