Introduction

This recipe has a slight cocoa taste due to the teff flour. I adapted it from "Going Wild in the Kitchen" by Leslie Cerier. I added in all purpose flour to thicken the batter a bit. I also added a bit of cocoa but you can play with many aspects of the recipe. Leave out the eggs and you have vegan pancakes. I made one 3" - 4" pancake as one serving so it's easy to take as many as you want and just add an extra serving to your daily tally. This recipe has a slight cocoa taste due to the teff flour. Ingredients

    Flaxseed, 2 tbsp
    Banana, fresh, 2 medium (7" to 7-7/8" long)
    *Silk, Light Vanilla Soymilk, 1.5 cup
    Vanilla Extract, 1 tbsp
    Honey, 1 tbsp
    Maple Syrup, 1 tbsp
    *Canola Oil, 2 tsp
    *Bob's Red Mill Teff Flour, 1.5 cup
    *Flour, white, 1 cup
    Baking Powder, 3 tsp
    Cinnamon, ground, 1 tsp
    Salt, 1/2 t
    Egg, fresh, 2 large

Directions

Put flaxseed in blender and grind until powdered. Add banana, soymilk, vanilla, honey, and 1 tsp of oil.

In a separate bowl mix flour, teff, baking soda, and cinnamon.

Add banana mixture to dry ingredients and stir until combined.

Drop by skant 1/4 cup full onto skillet to form 3 - 4" pancakes.

This tastes really great dipped in applesauce or yogurt. You could also make a fruit sauce on the stove with some fruit, juice, sweetener of your choice, and cornstarch. Cook until bubbly and thickened.
