Ingredients

    1 cup Low-Carb Baking Mix
    1/2 cup Unprocessed bran
    1/2 cup Whole Ground Flaxseed Meal
    1/4 cup Splenda Brown Sugar
    2 tsp. baking powder
    1 tsp. cinnamon
    1/4 tsp. sea salt
    1 tsp. vanilla extract
    1/2 cup unsweetened applesauce
    4 eggs, beaten
    1/3 cup club soda
    1/4 Unsweetened Vanilla Almond Milk (or reg milk if you prefer)
    1 cup bananas (can be any fruit but nutritional info may vary slightly.
    1/4 cup pecans (or any nut of your choice)

Directions

Combine all dry ingredients together. Beat eggs, add them to dry mix along with all other wet ingredients. Stir well, fold in bananas & pecans. Pour into muffin pan (with liners). Makes 13 if you fill them to the top, more if you fill halfway. Bake at 350 degrees for 20 minutes.
