Introduction

Ingredients

2 bunches of fresh greens, cleaned, stemmed, and chopped
1 tablespoon olive oil
4 sliced garlic cloves
1 jalapeno pepper, seeded and chopped (optional)
3 pinches of crushed red pepper flake
1 tablespoon of cider vinegar or sherry vinegar
Directions
Rinse greens until cleaned of all dirt or sediment. Tear or cut greens away from stems and coarsely chop the leaves.
Heat a large skillet on high heat. Cook oil, peppers (if added) pepper flakes, and garlic in oil briefly, then add the greens a handful at a time. Cook each batch until they begin to wilt down then add another batch until all greens are in the skillet.
Add the vinegar and salt, cover, and cook until just tender - this can be from 2-10 minutes depending on the greens - and serve!
