Introduction

A wonderful way to prepare fresh green beans and a sophisticated alternative to a green bean casserole. They are delicious topped with a dollop of plain yogurt and a few crunched up pita chips. A great dish to cook in your slow cooker for minimal effort.

Number of Servings: 8

Ingredients

    1/4 cup olive oil
    2 medium onions, cut into thin slivers
    12 cups fresh green beans, ends trimmed
    28 oz. can of crushed or stewed tomatoes
    2 tsp. sugar
    1 Tbl. chicken base
    1 tsp. ground cinnamon
    1/2 tsp. ground allspice
    3 Tbl. chopped fresh parsley

    Salt & Pepper to taste

    *Plain yogurt and pita chips as optional toppings

Directions

In a large stock pot, saute the onion in the olive oil until translucent and tender.
Add the can of tomatoes, chicken base, sugar, cinnamon, and allspice to pot and stir to combine,
Add the green beans and toss until coated.
Cover pot and cook over low heat until beans have softened and sauce has thickened (approximately 2 hours).
Add a little water if sauce becomes too thick or threatens to burn.
Right before they're done, add parsley and salt and pepper to taste.
Serve warm or room temperature.
Makes 8 servings of approximately 3/4 cup each.

*Optional: Top each serving with a dollop of plain yogurt (Greek style if you have it) and crumbled pita chips.


*Alternative Cooking Method: This recipe can be cooked in crockpot or slow cooker on low for 6-8 hours. Just saute the onion in a pan first and then add all the ingredients, except the parsley to the slow cooker. Add parsley just before serving.
