Ingredients

3/4 cup whole wheat flour
1/4 cup white flour
3/4 cup oats
1 1/4 teaspoon baking powder
1/4 teaspoon salt
1/3 cup Splenda
1/4 cup liquid egg substitute (egg beaters)
3/4 cup unsweetened vanilla almond breeze ( or fat free milk)
3 tablespoons unsweetened applesauce
1/3 cup Better 'N Peanut Butter (you can use regular peanut butter)
8 teaspoons sugar-free jam (any flavor)
Directions
Preheat oven to 400 degrees
Spray 8 cups of a 12-cup muffin pan with non-stick spray
Combine flours, oats, salt, baking soda in medium bowl.
In a separate bowl combine applesauce, egg beaters, Splenda, almond breeze and peanut butter.
Make a well in the center of the dry ingredients.
Add wet ingredients to dry and stir just until combined.
Fill each muffin cup with two tablespoons of batter.
Place 1 teaspoon of jam in the center of each muffin.
Top each muffin with 2 more tablespoons of batter.
Bake for 15-20 minutes.
Makes 8 muffins (or 16 mini muffins)
