Introduction

Number of Servings: 8

Ingredients

    2 cucumbers, scored, seeded and cubed
    5 medium tomatoes, seeded and cut into 1" pieces
    1 cup kalamata olives, pitted, and cut in halves
    1 cup large green olives, pitted, and cut in halves
    1 medium red onion, diced
    8 oz feta cheese, cut into 1/2" squares
    2 tbsp olive oil
    1/4 t sea salt, freshly ground
    1/8 t pepper, freshly ground

Directions

In a large bowl, combine cucumbers and onion. Add salt and pepper and mix well. Allow to sit 5 minutes while preparing tomatoes, olives and cheese (this will draw some of the water out of the cucumbers). Add olives and olive oil and mix again. Add feta cheese cubes and tomatoes and toss lightly. Can be served immediately or refrigerate for an hour and allow flavors to blend.

Makes 8 1-cup servings.

Serving Suggestion: Great with garlic pita chips! (not included in nutritional information)
