Introduction

Adding oriental peas to the omelet gives it a
crisp, fresh taste. Use your choice of veggies, moderately so the freshness comes through.

Number of Servings: 2

Ingredients

    1 Green Onion
    1/4 C Mushrooms
    1/4 C Flat, Oriental Peas (Snow Peas)
    1/4 C Cheddar Cheese
    1 C Egg Substitute
    2 Slices Lean Ham

Directions

Spray pan with non-stick spray
Chop Green Onion and saute in pan for 3 minutes
Add oriental peas/snow peas to saute cook additional 2 minutes.
Put in remaining ingredients: egg beaters, mushrooms and cheese.
Cook until egg mixture is firm, no liguid remaining on top.
