Number of Servings: 4

Ingredients

    1 12oz can of white albacore tuna
    1 can Navy Beans, rinsed and drained
    1/4 c tomato, diced
    1/4 c mango, diced
    1/4 c cucumber, diced w/ peel
    2 Tbsp onion, diced
    2 Tbsp green bell pepper, diced
    2 Tbsp lemon juice
    1 tsp dried cilantro
    1 tsp dried mint leaves

Directions

Mix all ingredients in a large bowl. Makes 4 servings.

~ If you are going to refrigerate and save this for later, I remove seeds from tomato and cucumber to make it less mushy later on.~
