Ingredients

    1 cup dry rice
    2 cups water
    4-5 thin slices of fresh ginger root
    1/4 cup fresh cilantro leaves
    1/4 tsp salt
    (optional) 1 tsp olive oil (not included in nutritional information)

Directions

I use a rice cooker to make this, but you can do it over a stove as you would normal rice. Add all ingredients to your rice cooker or pot. Bring to a soft boil for approximately 20 minutes, until water is gone. You can pick out the ginger pieces or leave them (but they aren't that great to chew on, just to flavor the rice). Makes six 1/2 cup servings.

You can substitute brown rice or wild rice, but it may change the nutritional information.
