Ingredients

    2/3 cup Buckwheat flour
    2/3 cup Soy flour
    1 cup Quick Cooking Oats
    1/3 cup Unsweetened Cocoa Powder
    3 tsp EnerG Egg Replacer
    1 tbsp Baking Powder
    1 tsp Baking Soda
    1 tsp Ground Nutmeg
    5 packets Stevita (1 tsp)
    1 cup Bananas (mashed)
    1/2 cup All Natural Applesauce (no sugar added)
    1/3 cup Toffuti Better than Sour Cream
    1/2 cup Soy milk
    1/3 cup Smart Balance Light Spred (Vegan)
    1 tsp Vanilla Extract

Directions

Preheat oven to 400 degrees F. Prepare muffin tin by lightly coating each well with non-stick cooking spray or using waxed muffin cups.

In medium mixing bowl combine all dry ingredients and sift thoroughly. Fold in remaining ingredients and stir until batter is moistened. Spoon into prepared muffin wells approximately 2/3 full. Bake 20-24 minutes in preheated oven. Remove from oven and allow to cool, placing muffin tin on wire rack.

Gently remove each cooled muffin from tin and serve. Makes 12 muffins.
