Introduction

Corn, Cannelloni Beans, black beans and red/orange peppers combined with lime juice and other ingredients to make a fantastic side dish. I'll eat this as a side with grilled chicken or add it to fish tacos. Ingredients

    2 cans Corn, drained
    1 can of Cannelloni Beans or chick peas rinsed and drained
    1 can of black beans, rinsed and drained
    1 red pepper, chopped
    1 orange pepper, chopped
    Chopped cilantro
    1/4 cup chopped scallions
    1/2 cup squeezed Lime juice
    1.5 tbsp olive oil
    4 tsp brown sugar
    2 tsp dijon mustard
    salt and pepper to taste

Directions

Mix beans, peppers, corn, cilantro and scallions in a bowl. Separately mix the lime juice, oil, sugar and mustard, then add to the bean mix. Let marinate in fridge. The longer it marinates, the yummier it is! Makes approximately 8 1-cup servings.
