Ingredients

    *Hillshire farm Lite Smoked Sausage, 14 oz
    Del Monte Diced Tomatoes, No Salt Added, 4 cup
    Chicken Broth, 1 can (10.75 oz)
    White Rice, long grain, 1.5 cup
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), .5 cup, strips
    Garlic, 4 cloves
    Chili powder, 1 tbsp
    *Oregeno, 1 tsp
    Pepper, red or cayenne, 1 tbsp
    Cajun Seasoning 3tbsp

Directions

Saute onions, pepper, and garlic until lightly browned. In another pan saute rice 2-3 minutes on Med-High til lightly browned. In another pot add sausage and saute lightly with pam, add in veggies after 2 minutes, add oregano, cajun seasoning, chili, cayenne, and 2 bayleaves if desired. Stir together for 2 minutes and add tomatoes, stir another minute and add chicken broth. Turn burner to high, when mixture boiils add browned rice. When mixture boils again cover and turn burner to low for 35 minutes. Makes 10 servings.
