Number of Servings: 20

Ingredients

    1 T olive oil
    2 medium onions, diced
    1 sweet pepper, diced
    1 jalapeņo pepper, diced
    1 clove of garlic, minced
    8 medium tomatoes, seeded and diced
    1 C water
    1 -29 oz. can of Hunt's tomato sauce
    1 T crushed pepper flakes
    1/2 tsp black pepper
    1 tsp salt

Directions

1.) Heat olive oil in a sauce pan/skillet on Medium-High heat.
2.) Saute onions and both peppers until slightly tender.
3.) Turn heat down to Medium heat.
4.) Add garlic and mix throughout the rest of the vegetables.
5.) Add diced tomatoes and mix throughout the rest of the vegetables.
6.) Once heated, puree the vegetables in a food processor or blender until you get the consistency you want. (Note, in a blender, hit 'puree' for a few seonds then turn off, repeat if necessary.)
7.) Put pureed vegetables in a sauce pan with water and tomato sauce.
8.) Add all seasoning into the sauce and stir well.
9.) Allow to boil, stirring occassionally.
10.)Reduce heat to Medium-Low and allow to shimmer for 1-2 hours. (Note, the longer you allow to shimmer, the less tart the tomatoes will taste).

This recipe yields 15-20 1/4-cup servings.
