Ingredients

    9 oz beef chuck steak extra lean
    12 white corn tortillas
    2 cans Rotel diced tomatoes and green chilies
    1 can diced green chilies
    1/2 white onion
    2 chicken bouillon cubes plus two cups boiling water OR 2 cans chicken broth
    Daisy light sour cream 1/3 cup
    1/2 package Neufchatel cheese
    1 cup shredded cheddar cheese
    garlic powder, salt, and pepper to taste

Directions

slice the beef and cook over medium heat with cooking spray until browned. Add the green chilies, Rotel, chopped onion, chicken broth, garlic, salt, and pepper. Simmer the mixture for 1- 2 hours.

Mix the cream cheese, sour cream, and 1 cup cheddar in a sauce pan and heat until melted on low.

Soften the corn tortillas with cooking spray on the stove or between two wet paper towels in the microwave.

Fill the tortillas with the beef and green chili mixture and place in a 9 by 11 pan. Pour the cheese mixture over the top and bake at 350 degrees for 20-30 minutes. Makes 6 servings of two enchiladas each.
