Introduction

Ingredients

    1 Tbsp Olive oil
    2 cloves garlic
    1/3 cup chopped onion
    3 cups quartered and sliced zucchini
    3/4 cup tomato sauce
    dash of salt and crushed red pepper
    1 box (7 2-oz. servings) whole wheat pasta - rotini
    1 package (14 oz) Butterball Everyday Turkey Sausage
    1 1/2 cups shredded swiss cheese (substitute any cheese)

Directions

Boil water for pasta. In skillet, fry zucchini, garlic, and onion in olive oil. Sprinkle with salt and red pepper. Cook until crisp tender. Remove from pan (keep warm). Cook pasta in boiling water. Meanwhile, cut and slice sausage and fry in the skillet you used for the veggies. After browning sausage, add in vegetable mixture and tomato sauce. Add in cheese Keep on low until pasta is ready. Add in pasta and mix well. Serve alone or with a salad.

    Very Good
    Quick and easy to prepare. I though it looked a bit boring in the pan, so I added a dash of chili sauce, and it was a surprisingly enjoyable meal. I will add this to my recipe collection. - 3/25/19
