Ingredients



    * *Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.)
    * Beets, fresh, 10 beet (2" dia)
    * Spinach, fresh, 1 cup
    * *Mustard greens, fresh, 1 cup, chopped
    * Swiss Chard, 4 cup, chopped
    * Garlic, 7 cloves
    * Basil, 4 tbsp
    * Sunflower Oil, 2 tbsp
    * Zucchini, 2.5 cup, sliced
    * Onions, raw, 1 medium (2-1/2" dia)
    * Egg, fresh, 2 large
    * Egg white, 10 serving

    Salt and pepper as well as some powdered mustard and tumeric.

Directions

Makes 4 LARGE servings or 6 smaller ones. Nutrion facts are four 4 servings.

Dice everything. Wilt the greens. Turn off heat and add about half the garlic and a third of the basil. Toss and set aside.

Add rest of basil to eggs as well as some mustard and tumeric and pepper. Mix well. Set aside.

Over med high cook onions till translucent, add potatoes and beets. Cook until just starting to get tender. Add zuchinni and rest of garlic. Cook until potatoes are almost but not quite done.

In a casserole, lay the greens out across the bottom, top with the veggie hash. Smoosh down gently to make it fit and be even. Pour egg mixture over and shake gently to work it down.

Cook in 370 oven for about 35 minutes. Excellent with some sweet and spicy tabasco or just some salt!

    Very Good
    Made this using sweet potatoes instead of regular potatoes also put in some white turnip. I did not have the swiss chard or mustard greens. I used a little mustard and lemon juice as well as garlic powder and sea salt and pepper. I really liked it a lot. - 7/29/10
