Introduction

This is a great summer recipe, because once you boil the pasta, there's no cooking! You can use fresh tomatoes, or in the winter you can use canned, and you can add grilled chicken chunks or broccoli or just about any veg that looks good! Ingredients

    1 lb. rainbow rotini or any pasta pieces, cooked and drained
    2 cups chopped ripe red tomatoes
    1/2 cup olive oil
    3 tbsp balsamic or red wine vinegar
    1/2 cup chopped onion
    6 tbsp chopped fresh basil (3-4 tbsp dried)
    4-6 cloves garlic, minced
    1/2 tsp oregano
    salt and pepper to taste

Directions

makes 8 1-cup servings

Mix the dressing first: Combine tomatoes, olive oil, vinegar, onions, basil, garlic, oregano, salt and pepper, in a big non-metal bowl, and let stand 2-3 hours (or overnight) on the counter.

Cook the pasta according to package directions, drain, and combine with the dressing. Stir well and serve immediately.

You may want to add more vegetables or pieces of grilled chicken. This is a great picnic salad because it doesn't require refrigeration.
