Party Salad or Dip to use with Tortilla Chips Party Salad or Dip to use with Tortilla Chips
Number of Servings: 9

Ingredients

    1 can Corn, drained
    1 can Black Beans, drained and rinsed
    1 diced Red or other color Bell Pepper (not yellow)
    1 diced Jalepeno
    1 cup diced sweet onion (Vidalia)
    2 tsp salt
    2 TBS Lemon Juice (or from one lemon)
    1 TBS Olive Oil
    3-4 TBS Basil chopped

Directions

Add all ingredients and refrigerate for at least 1 hour or overnight for best flavor. Very colorful and great as dip with tortilla chips or as side salad.

Makes approx. 9 servings of 1/2 cup
