Introduction

Ingredients

2 eggs
1 C honey
1/ 2 C olive oil
2 T plus 2 t cocoa powder
3/4 t vanilla extract
1 C shredded or mashed zucchini
3/4 C whole wheat flour
3/4 C all-purpose flour
1/2 t baking soda
1/4 t baking powder
1/2 t salt
1/8 t cinnamon
Directions
In mixing bowl, beat eggs. Add honey, oil, cocoa powder and vanilla and whisk together. Stir in zucchini. Add all-purpose flour, whole wheat flour, baking powder, baking soda, salt and cinnamon and stir until just moistened. Either spray muffin tin with cooking spray or use a basting brush to very lightly brush with olive oil. 1-2 teaspoons of oil will do all 12 muffin cups.
Bake at 350 for 20-25 minutes. Use a knife to release muffins from sides of tin.
To reduce calories and fat and increase nutritional value even more, substitute 1/2 C applesauce for the 1/2 C olive oil.
