Introduction

Yum! Load it with fresh berries and plain lowfat yogurt. Very nutritious. Can also be a handy healthy snack dry, just a spoon or two. Yum! Load it with fresh berries and plain lowfat yogurt. Very nutritious. Can also be a handy healthy snack dry, just a spoon or two.

Ingredients

    10 cups oats
1 cup flax meal (Keep it in the freezer for freshness)
    1 cup chopped pecans
3/4 cup oil ( I use olive oil for everything for health benefits)
3/4 cup maple syrup (the real thing)
    1 T ground cinnamon

Directions

Preheat oven to 325 degrees.
Mix all ingredients together in a very large bowl. You can use a stockpot if you don't have a bowl big enough.
Spread it all out on cookie sheets and bake until dry and the pecans begin to give off a toasty aroma. Time will vary with the pans you use and thickness of the oats in the pans. Let it cool before sealing it in airtight canisters or jars. it will keep well for at least a couple of weeks -- I don't know because ours is always gone in that time.
About 24 servings of 1/2 cup each. Check out all the nutrients -- it's loaded!
