Ingredients

    3.5 cups diced tomatoes, drained
    3.5 cups canned chickpeas, drained and rinsed
    1-10 oz. bag of fresh spinach
    .5 cup of champagne wine vinegar
    3 cloves garlic, chopped
    1 tsp salt

Directions

Combine all ingredients in pot, bring to a low boil, and simmer for about 30 minutes.

Makes 5 1-cup servings
