Introduction

This is a great way to get health carbs and a wonderful side dish to any main course. This is a great way to get health carbs and a wonderful side dish to any main course.
Number of Servings: 6

Ingredients

    1 1/2 Cups Pearl Barley
    1 Cup Mushroom pieces
    2 Tbs Chives chopped
    3 Tbs Flat Leaf Parsley chopped
    1 Tbs Margarine
    1/2 tsp Garlic Salt
    Lemon - squeeze

Directions

Cook mushroom pieces in skillet with small amount of EVOO or oil spray. Brown slightly. Set aside to cool.

Prepare Barley per package instructions for 5 servings.

When barley is cooked add cooked mushrooms, chives, parsley, garlic salt and margarine. Stir well.

Just before serving, squeeze fresh lemon juice and mix well.
