Ingredients

    1/2 C Almonds
    1/2 C Coconut
    3 C Oats
    2 t Cinnamon
    1.5 scoop Shakeology
    1 C Non-fat powdered milk
    1 C water
    6 dates (food processed or chopped finely)
    2 T baking cocoa (no sugar)

    Makes 18 "bars." I chop mine into big blocks.

Directions

Toast almonds in skillet over high heat. Do not to burn. They'll release a sweet odor as they cook. If it smokes, it's overcooked!

As soon as almonds start to release odor, pitch in coconut and turn over quickly to toast it (again, no burning!).

Remove from heat/ let cool (important as heat "kills" off some nutrients in Shakeology).

Put all ingredients in stand mixer (it's a HEAVY mixture). Substitute ingredients like dried cranberries instead of dates or pumpkin seeds instead of almonds. Other protein powders will require more or less but it should come out a heavy, thick, sticky glob!

Plop onto wax paper and wrap it well, flattening on counter into a flat "pavement stone" shape. Place in refrigerator (6hr - overnight).

Unwrap and use a chef's knife to chop into 18 blocks. Place in an air-tight container. Store in fridge or I've found they're fine in a desk drawer for the week.

One warning: it's really sticky to clean up! Plan on as much time cleaning as you did tossing it together :)

    Very easy to make! I used Vanilla Soy Protein powder and needed a touch more oats to get a stiff consistency. Next time I will add water slowly while the mixer is turned on and might not need full cup...

    Will be making these frequently! Great for travel and pre-run snack.

    When I used Designer Whey Protein Powder, it took 5 scoops!! So, they're really different. Shakeology gets THICK quite easily. Might be the algae in it ;p
